DeleteI'm not overly fond of eggs and would be grateful for some/ANY breakfast ideas.

A simple dish for the slow cooker
DeleteAdd Chicken pieces to the slow cooker then top with a large jar of chunky salsa. (You can do any heat you like) Cook on low for 3-4 hours. So good.
Salsa on scramble eggs are a delicious change.
Chicken and salsa in the crockpot is one of my favorite recipes too!

ReplyDeleteMock Chinese Fried Rice
Fake rice using grated cauliflower that makes a great side when craving rice or just something different.
Ingredients
3 large eggs, beaten
3 tbsps olive oil
1 breast, bone and skin removed chicken
3 1/2 cups cauliflower, grated ( I put in food processor)
1 clove minced garlic
1/2 tsp ginger
3 small green onions
3 tbsps soy sauce
Directions
1.In a wok or large flat skillet, heat enough oil to cover the bottom.
2.Fry minced garlic (or garlic powder) with finely diced white part of onions for approximately 1 minute.
3.Add grated cauliflower and fry for 4-5 minutes, stirring constantly.
4.Add soy, ginger, diced green onion tops, and pre-cooked cubed meat. Stir to mix well and brown a bit. set aside.
5. I would scramble the eggs first and set aside. The original instructions say to push the above mixture to one side of pan, then add more oil if needed and then scramble eggs in pan until cooked but still moist. Stir eggs into "rice" mix and remove from heat. I would scramble them before as my mixture got to gooped up. I like my eggs broken up into small pieces in my 'rice'.
6.Note: instead of chicken can use any combination of shrimp, beef, ham, turkey or vegetables of your choice.
7. and of course, watch your protein to veggie ratio!!!!
I made it and it is good. I skipped the chicken and added a little more soy sause but definitely enjoyed it. Thanks.

ReplyDeleteHi great site you have here. I appreciate the new ideas. A few items that I've enjoyed over the past few months that are simple (I'm no gourmet chef):
ReplyDeleteCrust Free Quiche:
16oz of Egg Beaters
2 cups shredded cheese (I change it up between Cheddar Jack and Swiss)
8oz cooked Turkey Sausage
1 pint of chopped mushroom slices
10oz package of frozen chopped spinach (thawed)
Combine all 5 ingredients in a large bowl then pour mixture into a 9" pie pan. bake at 350F for about 35-40 minutes. Season to taste. I like hot sauce personally.
Simple Chili:
16oz Ground Buffalo Meat (browned)
28oz can Diced Tomato
1 packet of chili seasoning
15 can corn
Throw everything in a skillet and simmer for 15 min or so. Top with a dollop of sour cream or some shredded cheese.
Sheppard's Pie:
Bottom layer - Ground meat of your choice (browned)
Middle layer - Can of peas & Can of corn
Top layer - Mashed cauliflower (instead of potatoes)
to make that I steam a head until it's really soft then run it thru a food processor with a little cream and butter.
I sprinkle paprika on top then bake at 350F for 30 min.
Pasta Free Lasagna:
I actually don't have this recipe in front of me, it's something my wife makes for me on occasion. She takes a simple lasagna recipe but rather than using the noodles, she substitutes thinly sliced layers of eggplant and zucchini. Delicious!
...I forgot to add peppers and onions to the chili. I usually just grab a bag from the frozen foods section and use about half.

Hi, I would like to add a variation to the Sheppard's Pie. Instead of cauliflower, I cook butternut squash, mash it with some butter and add nutmeg and cinnamon to it and use it as my top layer. It is delish!!!

DeleteHi, I have a question. The other day I made split pea soup because I had the Easter ham bone leftover. I made it thinking that it was made with peas, and peas are legal. However, in discussions with a friend, they seem to think that pea soup peas are not allowed. Is that true?

I make a lot of soup. My 2 favorites are a basic chicken soup using leftover rotisserie chicken and cook with celery, onion, basil, seasonings as desired (oregano, salt, pepper, bay leaf, etc.) Once chicken is falling off the bone, strain & put broth back on stove with chopped carrot, celery. Add cut up chicken and simmer until veggies are tender.
ReplyDeleteThe other recipe is easy to make as well and VERY satisfying. It is the following Italian Wedding Soup (I just don't add in the orzo into the soup. I make it on the side & if my family wants it they can add it to their bowls)

Ground beef, panko bread crumbs, and eggs make for delicious meatballs in this warm soup.
Ingredients
1 lb. ground beef (80/20)
2 ea. eggs
1/3 cup panko bread crumbs
3 Tbsp. parmesan cheese, grated
3 quarts chicken broth
3 cups fresh baby spinach
1 cup carrots, diced
1 cup yellow onion, diced
1 cup celery, diced
2 cups orzo pasta
½ cup (to taste) extra virgin olive oil
salt and pepper to taste
Cooking Directions
Saute carrots, onion and celery in oil until soft and starting to brown.
Add Chicken stock. Let the mixture reduce on high heat.
While boiling, mix beef, eggs, breadcrumbs and parmesan in a separate bowl to make meatballs. Form into ½ inch balls, and set on a baking sheet.
Cook meatballs on the baking sheet in 375F degree oven for 12-15 minutes.
Add pasta to soup to cook.
When meatballs are cooked, add them to the soup.
Stir in the spinach to the soup.
Boil 5 minutes and season with salt and pepper.
