Beef Pot Roast

Yesterday I was looking for a new meat recipe and I found just what I needed at Trader Joe's: Cabernet Beef Pot Roast. The roast is cooking in a crock pot as I type.

Cabernet Beef Pot Roast

Ingredients
  • 1 Cabernet Beef Pot Roast from Trader Joe's
  • 1/2 cup of water
  • 6 carrots cut into thick slices
  • 1 large onion
  • small box of fresh mushrooms 
Note: All vegetable are optional; add your favorites or just cook the pot roast alone with the water. The packages suggests browning the roast all sides of the pot roast in olive oil in a skillet, but I usually skip this step. I've done it both ways and I don't taste a difference either way.
Trader Joe's Cabernet Beef Pot Roast
Directions
Add 1/2 cup of water to the bottom of a crock pot.

Add the pot roast to the crock pot.

Cut onion and carrots into slices.

Top the roast with the sliced carrots and onions

Cover the pot.

Cook on low for 10-12 hours or high for 5-6 hours.

    I agree Theresa , its ok as long as we are not buying wine and cooking with it. We can't help it is it was added for us already. I just has some beef burgundy I picked up at Randals Farm. Can't sweat the small stuff as long as we are swimming along well in the river.

  5. Actually, I'm not saying we can't add wine to recipes, but for sure we can't drink it straight up! If you see a recipe with something in it you believe is not on program, always follow your instincts. Either alter the recipe to what you understand is "on program" or don't make it.

    I've learned over the past two years that I'm not always right. I was sure XX was allowed on programs, but a few people sent me an email saying they believe it isn't. I still thought I was right, but I gave up XX to see what would happen. I lost weight is what happened.

    I'm not always right and the program has evolved over time. I've learned that I too need to continue to evolve. My recent drop of weight after a long plateau has taught me that. When I gave up things I was sure I could eat and my weight began to drop...well you do the math!

    You're right, as long as we are swimming along in the river we're good. When we find we're in the river and floating, we need to look to see what's holding us in place.

    I jumped out of the river. Out of panic. Had symptoms of ketoacidosis witch can lead to coma or death. So I had popcorn and chocolates. But I'm going to try again. I'm only 3 weeks in, not happy about it. Guess I'm not all that healthy as I thought.
