Unstuffed Cabbage Rolls

Linda shared this recipe and I went right home from work today and made it. It's not French cuisine, but i really enjoyed it. It's simple ingredients and easy to make. Be careful that your balance of meat and veggie is good when you make this.
Unstuffed Cabbage Rolls
Ingredients
  • 1 1/2 - 2 pounds lean ground beef
  • 1 tablespoon oil
  • 1 large onion, chopped
  • 1 clove garlic, minced
  • 1/2-3/4 cabbage, chopped
  • 2 cans (14.5 ounces each) diced tomatoes
  • 1 can (8 ounces) tomato sauce
  • 1/2 cup water
  • 1 teaspoon ground black pepper
  • 1 teaspoon sea salt
Preparation
  1. In a large skillet, heat olive oil over medium heat. 
  2. Add the ground beef and onion and cook, stirring, until ground beef is no longer pink and onion is tender. 
  3. Add the garlic and continue cooking for 1 minute.
  4. Add the chopped cabbage, tomatoes, tomato sauce, pepper, and salt. 
  5. Bring to a boil. 
  6. Cover and simmer for 20 to 30 minutes, or until cabbage is tender.

    This is VERY good! I omitted the salt, since the canned tomatoes already had them.

  3. I'm glad to hear you enjoyed it!

    I made this recipe a second time this weekend and I cut back on the amount of cabbage. It's a delicious recipe and I want to make sure I have bite-for-bite veggie to meat or less veggie than meat. The cabbage shrinks down, but for me the full head of cabbage is too vegetable.

    Next time I make it, I'm going to take another photo, as the one above doesn't do the dish justice.

    My husband who is not on a diet couldn't leave it alone. We loved it. I used tomato's that I had caned so I didn't had a lot of water.

  5. I'm glad you enjoyed this recipe. It's one of my favorites and your post reminded me I haven't made this in a while. Using your tomatoes you canned yourself sounds great!
