Found Time

I didn't see a message that work was delayed 2 hours until 7:30, after my physical therapy session. With two hours of found time, I decided to pick up some groceries on my way home and do some cooking.
What's for dinner?
I hadn't packed a lunch or made plans for dinner, so the spare time worked out great. I boiled the chicken and while that was cooking I made a double batch of meatballs. After I rolled all the meatballs and dropped them into the crockpot, I pulled out my food processor and turned chunks of chicken into flakes. I added onions and celery to the chicken salad, but I only added mayonnaise to the portion I'm going to eat today.

It feels great to have cooked up a storm this morning and now I won't have to tromp across campus in the snow to get lunch at the deli, and dinner will be ready when I come home! There's othing like home cooking. (6:40 pm update: I left my lunch in the refrigerator and had to trek through the snow anyhow! Ah well, it got me out of the office at least!)

Anyone else out there cooking this morning? I live in a condo, so I didn't have to do any shoveling, which I'm sure many of you are doing even as I type.

I hope everyone's doing well out there getting dug out of the snow.

  1. Theresa, I also had a 2 hour delay today. I used that time to wash the floors which will free me up on Saturday. I realized the 2 hour delay after 6 am when I watched the news. Instead of going back to bed, I kept on with my usual schedule. Workout, a batch of laundry and after that, the floors and dusting. I had prepared extra food the last couple of days so I have enough for my husband and myself for dinner tonight. I am happy to have had those 2 extra hours as it made quiet a dent on my Saturday routine. I will use that time to work out and / or walk our dog “Mystic”. It feels good to be on track with working out and eating right. You were so smart to cook ahead of time and have meals planned. How often have I got off track because I didn’t do that and by the time I was able to eat something it was the wrong foods because I had nothing prepared and I was starving. We need to make food preparation a priority, including snacks so we don’t get off the plan. Drive safely and be patient.

  2. I also did a lot of cooking today. Most of it was not for me, but for the community store where I volunteer. We made 140 empanadas. I ate some of the filling for the chicken-chile-cheddar one, but of course not the crust. Then just broiled up a few days worth of chicken breasts to be able to turn into all kinds of things, including chicken salad. Yes, it makes such a huge difference to have easy protein on hand.

    I've been looking over a lot of the recipes on the key hypnosis support group page and I keep getting the feeling that most of them must be from people who have reached maintenance, because they seem to be very, very cheese heavy. Is that true?

    Am finding it hard to find foods to satisfy cravings for crispy, salty, spicy things. Bacon does the trick, but I don't want to eat too much of it. I've looked at the turkey jerkies, etc, but don't eat things with additives, preservatives, etc. Tried parsnip fries, but they just didn't do it. Any ideas? The crunch is really important. Definitely don't want to deep fry anything. In the past would have had macadamias or cashews.

  3. Hi Eva. You have some very good questions. I am keeping my eyes open for the replys. I usually put some Pepperoni slices in the Microwave. They crisp up in just a couple of minutes. It's very satisfying.
