Ingredients
- 4 cups cooked squash or pumpkin mashed
- 1 cup chopped onions
- 1 1/2 cups chopped mixed red and green peppers
- 2-3 large cloves crushed garlic
- 1 tsp ground cumin
- 4 beaten eggs
- 2 cups corn
- 1/2 tsp chili powder
- 1 cup cheddar
- 1/2 tsp ground coriander
- dash of cayenne
- dash of black pepper
- 1 tsp salt
- 2 Tbs olive oil
- Saute oions, garlic and spices in olive oil until translucent.
- Add peppers and salt, cover and cook 5-8 min
- Add saute to mashed squash, along with corn and beaten eggs. Mix well. Taste to correct seasonings.
- Spread into a buttered 2 quart casserole and top with cheese.
- Bake in 350 oven, 20 min covered and 15 min uncovered.
Oh, Miss Theresa! Thank you so much for posting these recipes. I am hosting Thanksgiving this year and have a variety of folk to satisfy. A vegetarian, several omnivores and an 88 year old who has never let a vegetable pass his lips. Am planning to make a separate "stuffing" for myself - with sausage, onions, celery and poultry seasoning. Will surely try the celeriac. I think the veggie lovers will be impressed. My girls are taking over many of the cooking duties, and they are anxious to try new things. Have been a bit stumped on starch substitutes, so I really appreciate this.
ReplyDeleteI must also say, I am grateful for your blog. I read much of it when waiting for my first appointment, and was greatly encouraged. I really need to lose weight - doctors orders - and do it fast. I started to reduce my carbs and sugars while waiting for the first visit. Have no idea how I am doing weightwise, but this morning, I measured my waist and I have lost 7 inches. Hopefully my doctor will see progress too.
So in the spirit of Thanksgiving, "Thank You, Miss Theresa!" And have a lovely, healthy holiday!

ReplyDeleteCongratulations on your incredible success - 7 inches off your waist is fabulous. I'm sure you are losing weight in other places on your body that you're not measuring. Your hands, fingers, feet, neck, face, thighs, and all over your body loses weight.
When we have those times we're feeling like we're on a plateau, we have to remember: 1) our body is healing itself and this is a natural part of the process, and 2) weight is coming off in areas we are not measuring or seeing.
I'm glad these recipes open menu options for your Thanksgiving and holiday dinner.
I decided I don't have to try all the recipes my friends have shared with me before posting them. Plus, when I post them I too can easily find them later when I want to try something new!
