Breakfast Cups

I'm on a roll with adding new recipes, as I'm in the "switching things up" mode! These Breakfast Cups, a recipe from key-friend Lou, offer a great way to make a few meals ahead.
Lou's Breakfast Cups
Place cooked breakfast sausage in the bottom and a little up the sides of muffin a tin.

Add any other ingredients you wish.
Breakfast sausage, diced peppers, eggs
 Bake at 325 for 20-30 min.

Scramble some eggs and pour in the cups covering everything. I also put a whole egg on 6 of the cups instead of the scrambled just to test it out and I like the scrambled much more.

  1. Did something similar with Canadian bacon and eggs/cheese/veg! Press a slice of the Canadian bacon into each of the muffin tins. This will take some effort and patience, as it will want to jump out! Add an egg, or some scrambled eggs or egg beaters (I also prefer the scrambled). Top with a bit of veg - I like green onion - and a hint of parm and bake. These are great Grab And Go breakfasts!

  2. Another breakfast recipe!
    Eggs Florentine
    Saute some fresh spinach in olive oil and garlic. Add a few shakes of crushed red pepper. Arrange on plate. Fry eggs in the oil remaining in pan. Serve over spinach. Quick and easy!

  3. I had found myself concentrating so much on the protein portion of the meal that I often didn't bother with the vegetables. Made for a rather unbalanced diet. Now I am trying to eat a bigger variety of vegetables and including at least one with each meal. Smaller portions of two vegetables - usually a green and non-green - seems more palatable than a single serving of one. Not sure why, but it works for me. It also looks nice on the plate.

    1. Yes it's important to include vegetables for a balance diet and I'm sure you stomach thanks you for adding veggies back. I like the idea of 2 small servings of veggies with your meals. It's all about balance and this includes balancing the esthetics on your plate visually to please the eyes too! Well done Momomig1
